I once had the chance to eat the famous layered sandwich cake from Ayaans Bakery. That was years ago. I haven’t had it since, and am told that it is no longer on the bakery’s menu. I was not happy about this, and set myself to the task of recreating it’s flavor with my choice of fillings!

A twist on your regular sandwich, the Smörgåstårta or “sandwich cake” is originally a Swedish dish served as a snack at tea time. Interestingly, this salty layered cake’s origins can also be traced to Estonia and Finland.

It’s a savory cake that looks like a sandwich but with large amounts of filling; like a layered cream cake. The layers can have any type of filling, but usually consist of egg, chicken, olives, tuna or salmon. It’s really up to you. The sandwich cake is served cold, and is covered with a mixture of cream and cream cheese.

Ingredients:

Egg Filling:
  • Eggs -- 6
  • Mayonnaise -- ½ cup
  • Salt -- per taste
  • Black Pepper -- ½ tsp
Chicken Filling:
  • Chicken Breast Fillet -- 3 pieces
  • Mayonnaise -- 1 cup
  • Sour Cream -- 4 tablespoons (add 1 teaspoon of lemon to 4 tablespoons of cream and set aside. Your sour cream will be ready in one hour)
  • Butter -- 2 tablespoons
  • Salt -- ¼ teaspoon
  • Black Pepper -- 1 teaspoon
Pickled Cucumber:
  • Cucumber -- 1 (cut into thin, round slices)
  • Vinegar -- 4 tablespoons
Icing:
  • Cream -- 200 ml (one pack)
  • Cream Cheese -- 100 grams
  • Mayonnaise -- ½ cup
  • Cayenne Pepper -- ¼ teaspoon
  • Cheddar Cheese -- 6 slices
  • Salted Butter -- 150 grams
  • Olives -- 1 cup
  • Tomato -- 1 (cut into round slices)
Bread
  • Sandwich bread -- 20 slices
  • Preparation time : 30-40 minutes
  • Cooking time : 10-20 minutes
  • Number of servings (yield) : 10-12

Instructions:

  1. Boil eggs in a pan and after about 15 minutes take them off the stove and let them cool. Peel and mash with a fork or egg masher. Add mayonnaise, pepper, and salt to the eggs and mix well. Set aside
  2. Boil chicken breasts with six large whole black pepper and two cloves of garlic. Check with fork to make sure they are completely tender before taking them off. The chicken can be chopped in a chopper or shredded by hand. Add sour cream, mayonnaise and melted butter and mix well. Then add seasoning, mix again and set aside
  3. Cut thin round slices of cucumber and put in a heat-proof bowl with vinegar. Microwave at full power for 30 seconds. Use a fork to turn the cucumber upside down and then microwave for another 30 seconds. Repeat this process till all cucumbers have turned a pale green. Spread on a plate and let them cool
  4. Beat one pack of cream to stiffen it, then add softened cream cheese. Using a spatula, add the mayonnaise. Then mix in the black pepper, cayenne pepper and salt. Keep this mixture refrigerated
  5. Cut the tomato and olives into thin round slices
  6. Cut off the sides of the bread. You should have equal-sized bread slices
Assembling the cake:
  1. Place all the fillings and butter on your work space. Making a square cake, take four slices for the bottom layer and place them on the cake dish. Spread a thin layer of butter as well as about a ¼ inch layer of egg filling
  2. Spread the butter thinly on all four bread slices that will come on top of the egg mixture. This is the first layer, so press it down slightly using your hand
  3. Cover with a layer of mayonnaise and add a layer of tomato and olives all four bread slices. Layer this with mayonnaise on the slices that will come on top of the tomato and olive layer
  4. Layer the next slice with butter and add the cheese slices, making sure all bread slices are covered. If the cheese slices are small, cut thin layers of cheese and make sure to cover the entire bread surfaces
  5. Cover the bread that will cover the cheese with mayonnaise. Three layers have now been completed. Now add the mayonnaise and pickled cucumber, making sure the whole slice is covered. Layer with mayonnaise and cover the cucumber
  6. Put a thin layer of butter and fill with about a ¼ inch thick layer of chicken filling. (Pressing each layer into the next is important, so the layers gel together as a cake)
  7. Now use a serrated knife and take the cream cheese icing and start covering the whole cake with it
  8. Keep covering and smoothening till the entire cake is covered
  9. Garnish with olives and cucumber
  10. Refrigerate the cake and serve cold
