I love mangoes. You love mangoes. Who doesn’t love mangoes? Anyone who hates mangoes is the enemy!

I’m sure most of us have attended our share of mango parties this summer, and enjoyed the king of fruits like a bunch of excited little children (or wild animals. Seriously, can anyone really eat a mango in a civilized manner and get that same kick out of it?).

So before we say our alvidaahs and fond farewells to the last batch of mangoes of the season, how about trying these easy and delicious mango recipes and make our goodbye a sweet one!

1. Mango Delight

Ingredients:

  • Mangoes – 2 to 3 (large)
  • Whipped Cream – 2 packs
  • Nuts (optional)
  • Graham Crackers or Marie Biscuits
  • Sugar

Instructions:

  1. In a bowl, empty the packs of cream and whip well till it fluffs. Add sugar according to your taste and mix well
  2. In another bowl, crush Graham crackers or Marie biscuits just a little
  3. Cut two and a half mangoes into cubes, and cut the remaining half mango into a round shape
  4. Now start layering. Put biscuits first, then mangoes, then nuts (crushed or full, your choice) and then a layer of cream. Keep making layers till you’re out of ingredients
  5. On the last layer of cream, smoothen the surface with a spatula and decorate it with the round-shaped mango slices and nuts

2. No-Bake Mango Cheesecake

Ingredients: 

  • Mangoes – 2 to 3 for puree and 1 to 2 for topping
  • Graham Crackers or Oreos without cream (for the base)
  • Butter (melted)
  • Cream Cheese – 3 to 4 blocks
  • Packaged Cream – 2 packs
  • Gelatin (optional)


Instructions:

  1. Crush biscuits completely and add melted butter
  2. Mixed well and make a base in a round dish. Refrigerate
  3. Prepare mango puree
  4. Cut one mango into chunks and the other into round shapes
  5. In a bowl, beat cream cheese blocks with cream until no lumps remain
  6. Add mango puree in this batter and mix well
  7. Add mango chunks and mix again
  8. Now take out the round dish from the refrigerator and pour this batter on top of the base
  9. Smoothen surface with a spatula and decorate it with the round shaped mangoes. Refrigerate again for an hour and serve

3. Mango Chutney

Ingredients:

  • Mangoes – 2 (large)
  • Water – ⅓ cup
  • Ginger – 1 teaspoon (grated)
  • Cardamom Pods – 6
  • Clove Powder – 1 pinch
  • Cinnamon Powder – 1 pinch
  • Sugar – 1 to 2 cups
  • Vinegar – 1 tablespoon
  • Red Chilli Powder – ½ teaspoon
  • Cumin Powder – ½ teaspoon
  • Salt (according to taste)

Instructions:

  1. Cut mangoes into chunks
  2. Add water and the mango chunks in a pan and cook on a slow flame for four to five minutes, stirring regularly
  3. In the same pan, add cardamom pods, cinnamon powder, grated ginger, sugar and clove powder, and keep stirring on a slow flame for 15 to 20 minutes till the mixture thickens
  4. Now add salt and vinegar in the mixture and cook for 4 to 5 minutes more
  5. Now remove pan from heat and let it cool at room temperature. Add red chili powder and cumin powder as it cools down. It will get thicker as it cools
  6. Now pour in a glass jar and refrigerate for later use

4. Eggless Mango Muffins

Ingredients:

  • Flour – ¾ cup
  • Wheat Flour – ¾ cup
  • Powdered Sugar – 1 cup
  • Mango Pulp – ¾ cup
  • Baking Powder – 1 teaspoon
  • Baking Soda – ½ teaspoon
  • Curd – 2 cups
  • Butter (melted) – ½ cup
  • Water (warm) – 2 teaspoons
  • Vanilla Essence – 1 teaspoon
  • Flax Seed Powder – 1 teaspoon

Instructions:

  1. Mix flour, wheat flour, baking soda and baking powder together
  2. Mix flax seed powder in warm water and set aside
  3. Pre-heat oven
  4. Melt butter and add powdered sugar to it
  5. Add curd, mango pulp and flax liquid and mix well
  6. Now add the dry batter with the wet mixture and gently mix without leaving any lumps
  7. Add a drop of vanilla essence to the batter
  8. Now add batter to the muffin pans
  9. Now bake for 20 to 25 minutes at 180 degrees
  10. Use a toothpick to check if it has been baked properly. If the toothpick comes out clean, it means the muffins are ready to serve
