This is an easy and o-so yummy recipe.  The benefits of bottle gourd (Loki)  as a veggie are great- it helps in controlling cholesterol level.  This veggie should be part of our diet once a week.  The recipe doesn’t use tomatoes or red chillies and a great way to cook this vegetable. You just need to make sure that Loki is fresh when you pick it from market. You can test by pressing with your nail. If its green from the inside that means its fresh. If the vegetable is not fresh you will have a hard time cooking it. Actually it can take hours to cook through in a pan! We have had some bad experiences cooking after picking bad Loki.

A recipe I learnt from Roohi aunty and it is cooked in my Kashmiri family as a veggie portion on Kashmiri dinners.


  • 1 kg Loki – peel it and dice it small.
  • Garlic- 1 tbsp paste
  • Cumin seeds 1/2 tsp
  • Corriander powder 1/2 tsp
  • Turmeric powder 1/4 tsp
  • 1 litre milk
  • Salt to taste
  • Preparation time : 10 minutes
  • Cooking time : 30 minutes
  • Number of servings (yield) : 4


  • In a deep pan add oil on medium heat.
  • Add garlic paste and mix with spoon till golden brown.
  • Add diced loki (bottle gourd) in the pan.
  • Add cumin seeds, coriander powder,turmeric powder and add salt to taste.
  • Sprinkle 2 tbsp water and cook it.
  • Keep mixing with a spoon and adding 1 tbsp water. Repeat till vegetable is almost soft. (traditionally known as bhoon-na)
  • Now slowly add milk while mixing it with vegetable. Keep mixing till milk and vegetable are nicely merged.
  • Cover the vegetable and cook on medium heat.
  • Cook till little gravy is left.
  • Serve it with white rice.
