Clear Chicken Soup with Vegetables
As winters are approaching and season is changing, it brings with it the gift of flu, fever and bad throat. I had a bad case of flu this september and this soup truly rescued me! Try this clear soup recipe. Free from corn flour- this is a truly health treat.
- Chicken 1/2 kg (you can use the neck, wings pieces and some pieces with meat)
- One Whole Carrot ( Large)
- One large potatoe (cut in half)
- 1/4 piece cabbage (optional)
- One Spring onion (whole-cleaned from the end)
- 7-8 whole black pepper
- 2-3 garlic pieces
- Salt to taste 1-2 tsp
Add all the above ingredients in a deep pan. Pour 3-4 cups of water and put on high heat.
Once the water starts boiling- slow down the heat and let it simmer for atleast 45 mins to 60 mins. Vegetables should soften.
The color of water will change. Taste it to check the flavours intensity and adjust for salt.
Now sieve the chicken and all vegetables from stock. You will be left with a beautiful rich in flavor stock. This stock can also be used to make chicken corn soup
Cut the carrots and potato, that you took out from the stock, into cubes .Also, shred the chicken pieces.
Add back the chicken and vegetables into the stock and let it simmer for some time. Your clear soup is ready!
Serve it in a bowl and top it with slices of left over spring onion (green part). Sprinkle with crushed black pepper.
