Philadelphia Cheese Cake

Warning: This is a really heavy cake both on your pocket, as well as on your calorie count. Satisfaction guaranteed.

I can’t explain my love for cheese cakes, any kind- fresh or baked. I love the combination of cream cheese with tangy lemonish flavor, biscuit base,  topped with fruit syrup . Best combination – a strong cup of hot coffee! I tried this recipe given by Shua Api, over the week for Shahab’s birthday. It turned out way better than I imagined.

Philadelphia Cheese Cake

Ingredients for an almost two pound cake.   You can slash exact half for a one pound cake.

Filling:

  • 2 packs of Philidelphia Cheese
  • 1 can of condensed Milk
  • 1 pack of cream
  • 6 tbsp of Lemon Juice
  • 3 tbsp Gelatin Powder (Make sure you use fresh pack of Gelatin as it works best!)

Base:

  • Biscuits (Digestive Brand works best) for the  base
  • Butter  (100 g- enough to cover the base)

Tin:

  • Loose base

Step 1: Base

Grease the pan with butter on base and sides.

Crush biscuits by putting them in a bag and crushing them till they are fine. Put them at base of the  tin. Biscuit base  should be 1 inch in height at least.

Melt butter in microwave and pour it all over the biscuit layer. Let it rest in fridge.

Step 2: The cream cheese filling

Put cream cheese in a bowl – whip it with hand blender. Add condensed milk and  lemon juice and whip it more.

Take about 3/4 cup of water in a sauce pan and boil it, now add 3 tbsp of Gelatin and mix it well. Mix till all granules are gone. Take it off heat and let it cool for a minute. Add this mixture into cream cheese and condensed milk. Blend it well.

In another bowl whip the cream till its thick. Add it into cream cheese, condensed milk and gellatin mixture.

Whip some more till the mixture is nice and smooth and of one color.

Now pour this mixture on top of the biscuit base. Smoothing it out on the top.

Put this mixture in freezer and let it rest for about 3 hours. You will know its set when the cheese filling is hard.

Step 3: Serving

Take a knife and loosen the edges of the cake by carefully sliding the knife on sides. Remove the top of the tin and voila the cheese cake will be out!

Step 4: Topping

This cake is best served on its own. If you like toppings you can top it with fresh fruits like mango or canned fruits like pineaaple.  You can also do a sour cream , vanilla and coffee topping (like in this picture above)

Try it out for a special occasion and tell me how it turns out!

instead of just putting plain cream, try mixing 1/2 cup of sour cream with 1/2 cup of normal cream. The sour cream will add a lovely taste to the cheesecake :) and substitute lemon juice with lemon zest … coz 6tbsp lemon juice coupled with sour cream would make the cake a bit too sour
