Banoffie Pie – Sweet and Simple

I somehow couldn’t get my hands around baking cakes or pies. Instead I learnt a few non-baking desserts. My favorite is Banoffie Pie.

The ingredients

Utensil: Flat dish with 3-4 inches raised corners
Digestive biscuits 7-8 (you might need more if you choose a bigger flat dish)
Cream 2 packs (put it in freezer an hour before you want to make this dish. Best to buy cream a day before and refrigerate overnight)
Bananas 2-3 sliced thinly in a round
Butter 3 tbsp
Condensed milk cans two
Gelatin Powder 2 tsp

The base

First crush the biscuits finely with the back of a spoon. (I even do this in a grinder if I’m in a hurry but spoon crushed ones make f0r a better texture) The base of the dish should be filled with these crushed biscuits and be at least half an inch in height.

Melt two tbsp butter (microwaving for 10 seconds will do too). Pour melted butter on the layer of biscuits – partially covering the biscuits.

Put this dish in the freezer and move on to the next stages.

The crux

Place 1 tbsp butter in a non-stick pan and when the butter melts add the two cans of condensed milk. On medium heat, cook it till condensed milk changes its color. With a wooden spoon keep mixing it (DO NOT STOP!). Turn off the heat and immediately put this toffee looking mixture on top of the biscuits layer.

Warning: The condensed milk can get really tough and chewy if overcooked. Once mine got so tough I had to use all the power in me to slice and serve. So make sure to take it off the heat as soon as the color changes.

Place this dish back into the refrigerator.

The top

Take out the cream from the freezer and place it in a plastic bowl. Add 1 tbsp sugar. Add gelatin mixed in 2 tbsp warm water. Start whipping the cream till it thickens and becomes fluffy. If it doesn’t thicken, place the cream with the bowl in freezer for 15 mins and then whip again. Don’t lose hope!

Take out the dish with biscuits and toffee mixture from the refrigerator, and distribute the sliced bananas on top in one layer. Spread over with whipped cream as the third layer.

Place the dish in the refrigerator again for the cream to cool and settle down. It can take about 1-2 hours for the cream and gelatin to settle. Best to make this dish before you start cooking dinner. This will give it enough time to settle.

Before serving you can add sliced bananas (quoted in lemon juice) on the top. Sprinkle powdered coffee  just to add color to the dish.

wont cut bananas turn black if the dish is prepared in advance… like 2-3 hrs before serving

thanks for asking. The bananas are in between the layer of cream and condensed milk, they wont get black. If you however put them at the top, they might. For this I usually quote them in lemon juice, whether I am making it now or right before serving.

Just a question – The recipe calls for two tbsp butter which is melter and poured on top of the biscuit layer. Additionally, it calls for more butter to be heated in the pan to which the condensed milk is added. Is it the same butter halved? If it is additional being used, what’s the quantity?

Its additional 1 tbsp being used. I will just update. Thanks for asking
