Bhindee Masala (Okra Masala)- Another vegetarian’s treat!

Its season for Lady finger (Okra). It’s a nightmare to clean this vegetable but just because it is my favourite vegetable, I can take the pain of preparing it.

Buying Lady Finger:

There is just one tip, DO NOT go for the long sized lady fingers. Pick the smaller or medium size lady finger. This vegetable should be eaten in its season otherwise it can have small insects inside.

How to wash this vegetable?

Wash the vegetable normally by repeatedly draining water through it. Put the washed vegetable under a fan or spread it out in a tray so the water evaporates. Make sure that lady finger is completely dry before you start cutting. If its not dry, you would have to dry it with piece of cloth (one piece each!) If you don’t do this and cut the lady finger, it will become extremely slimy and ruin the taste.

Now cut the lady finger in one inch slices. Throw away the head and the tail of the lady finger. Also make sure to throw away the lady fingers that have big seeds (as they don’t cook easily)

Now let’s get to cooking

Put 2 Tbsp oil and fry the lady fingers. Don’t over fry as that will change the color of the vegetable. Just cook till the vegetable is a little soft. If you like it crispy, just toss it a bit in oil and take it off the heat.

Now in a separate pan, cut 3 onions and fry it a till onions become transparent. Add three finely diced tomatoes. Cook it on slow heat, so the onions and tomatoes become one in a gravy. You can partially grind the onions and tomatoes as well. Fry till the oil comes out. You can also put salt, red chillies, ½ tsp cumin seeds at this point.

Now put the fried Okra into the tomato paste and let it cook for about 10 minutes on slow heat.

My favourite combination is to eat it with Naan and Lassi
