Stuffed Grilled Chicken with Tomato Cream Sauce- Fit for Monsoon

With the arrival of monsoon rain, the weather is pleasant and relatively cooler – perfect weather for trying something different and more indulging  Over the last weekend I decided to go for stuffed chicken with some oozing-out cheese fillings for extra taste that one can usually treasure through fine dining only.

I have perfected this recipe of stuffed grilled chicken over time. The combination of sweet ‘n tangy grilled chicken with tomato cream sauce is my all-time favorite. To elevate the usual chicken to a whole new level I’ll tell you how you can stuff it with cheese that drips out as soon as you slice!

I recommend serving it with mashed potatoes and steamed vegetables or coleslaw. Enjoy!

Stuffed Grilled Chicken - Ingredients:

  • Chicken marinate
    • Chicken breast – 2 piece flattened
    • Salt – ¼ teaspoon
    • Paprika – ½ teaspoon
    • Sugar – ½ teaspoon
    • Lemon juice – 1
    • Worcestershire sauce – 1 teaspoon

Marinate the chicken with the above mentioned ingredients and let it rest for half an hour before use.

  • Chicken filling
    • Cream cheese / cheddar / pizza cheese (any option available home)  – 2 tablespoon
    • Mozzarella cheese – 2 tablespoon
    • Spring onion – 1 medium finely chopped
    • (Optional) Spinach – boiled and chopped
    • Salt – to taste
    • Green chilies – 1 small finely chopped
    • Oregano ½ teaspoon

To make a smooth filling grate the cheese and add spring onion salt, green chillies and oregano to it.

  • Tomato Cream Sauce
    • Oil- 1 tablespoon
    • Onion – 1 medium
    • Garlic – 2 cloves
    • Tomatoes – 2 – 3 medium
    • Green chilli – 2- 3
    • Red chilli powder – 3/4 teaspoon
    • Salt – 3/4 teaspoon
    • Oregano and basil leaves – 3/4 teaspoon
    • Sugar – 3/4 teaspoon
    • Cream – 2 – 3 tablespoon or more if you like

Method

  • Blend onions, tomatoes, garlic and green chilies with a dash of water in a blender.
  • In a pan heat the oil and add the blended puree, cook it for a minute and then add salt, sugar, red pepper powder basil and oregano.
  • Let the mixture simmer on a low medium flame to release all the flavors of the herbs. Cook it until the water is dried from the gravy and oil comes up. (This will make a good quantity of sauce which can be easily stored in freezer and used in number of recipes )
  • Add cream and let it simmer for two to three minutes and yummy tomato cream sauce is ready.

Getting the Chicken Grilled !!

  • Flattened the chicken breasts with a rolling pin or hammer to get even results.
  • Spread the cheese filling over the chicken breast and roll up from one short end to enclose the filling tightly in the chicken.
  • To make the chicken pieces look a litter neater, use wooden skewers to secure the filling inside the rolled chicken
  • Heat a teaspoon or oil and butter in a grill pan or skillet, add chicken pieces and cook for 4 – 5 minutes, turning, until well browned all over. Add the chicken marinate to give more flavor to the grilled chicken.
  • Once the chicken is tender, take it out of a plate, remove the skewer and then place it on the serving plate.
  • Server the grilled chicken with tomato cream sauce. For side servings can make mash potatoes, coleslaw, steamed vegetables or just some grilled onions like what I did!!

Fatima Ali

I am trained to be an IT professional. I served National University of Sciences and Technology (NUST) for six years after graduating from the same university. I love cooking and wanted to be a chef at one point in my life. As long as I can remember, cooking good food has been my passion and it makes me happy.
My cooking lessons were a bit unusual though. Back in the day when digital did not mean much, my father would record cooking shows (knorr ka kitchen, kaukab khuwaja and Zee Khana Khazana – Chef Sanjeev Kapoor) for me that I would watch endless times later on, before trying the recipes out. I would make brownies and cold cake almost every day while my mother was asleep. This was my way of surprising her every evening. My mother cooks amazing food too and I have tried many of the recipes that she has written in her recipe book.
I draw inspiration from a number of chefs from televised cooking shows such as Late Chef Farah, Chef Rahat, Chef Mehboob, BBC Food, Masala TV, Chef Shai, Chef Sharmeen, Master Chef Australia and my ultimate favorite Chef Shireen Anwer. I would not be as good a cook that I am without passive guidance from each one of these.
